Parsley, Basil, and Sorrel for Winter (in the Freezer)
Ingredients: parsley leaves, basil leaves, sorrel leaves, oil (a few tablespoons, if we have a lot of sorrel), ice cube trays
To prepare a delicious sorrel sauce that will enrich your dishes, follow these simple yet flavorful steps. Start by selecting fresh parsley and basil leaves, two aromatic herbs that add a touch of freshness to your meals. Make sure the leaves are clean and free from any signs of damage. Once selected, wash them thoroughly under a stream of cold water to remove any impurities or residues.
After washing, carefully trim the stems, as we only want the leaves. Place them in a food processor or blender and chop finely. This step will release the intense aromas of the herbs and create a smooth paste that will give a unique flavor to your dishes. Once you have a consistent paste, transfer the mixture to ice cube trays. This will allow you to preserve the flavors and use them later during the winter.
Next, take a few bunches of fresh sorrel, an ingredient with a unique, slightly sour taste. Wash it well, then place it in a saucepan where you have added a tablespoon of oil. Heat the saucepan over medium heat and stir the sorrel for 2-3 minutes. You will notice how the leaves will gradually melt: initially, they will turn a brownish hue, then, through cooking, they will take on a dark green color, significantly reducing in volume. This process is essential to concentrate the flavors and obtain a tasty paste.
Once the sorrel is ready, fill the ice cube tray with the obtained paste. This will be the base for various culinary preparations. You can use the sorrel sauce cubes in soups to give them a distinctive note or to sour stews, adding a touch of acidity and freshness. Additionally, the sorrel sauce pairs wonderfully with sour cream, served alongside boiled meat, creating a delicious contrast. Don’t forget to try it with vine leaf rolls, where it will add an unmistakable flavor.
Enjoy your meal! This simple and quick recipe will transform your ordinary meals into true feasts, full of flavors and colors. Whether you choose to use it immediately or save it for later, the sorrel sauce will surely become a reliable ally in your kitchen!
