Zucchini with Curry
To prepare a delicious zucchini pickle, we start by cleaning and washing the zucchinis and onion well. It is important to choose fresh zucchinis with a firm texture to achieve a tasty and crunchy final product. After washing them, we cut the zucchinis into cubes of about 1-2 cm, so that they marinate evenly. The onion, on the other hand, is sliced into thin rings, which will add an unmistakable flavor to our pickle.
In a large bowl, we place the zucchini cubes and onion rings, sprinkling salt evenly over them. We mix the ingredients well to ensure that the salt penetrates every piece. Then, we cover the bowl with a lid or plastic wrap and let the mixture sit at room temperature for 24 hours. This process will allow the zucchinis and onion to release their juices, which will contribute to their marination.
The next day, we take care of the spice mixture. In a small bowl, we combine sugar with curry, mustard seeds, pepper, and ground coriander, as well as honey and vinegar. This mixture will add a complex flavor and a sweet-sour taste to our pickle. After mixing the ingredients well, we drain the water released by the zucchinis and onion, then pour the spice mixture over the vegetables. We cover the bowl again and let everything sit for another 24 hours.
On the third day, it is time to finish the preparation. We pour all the contents into a pot, placing it over medium heat. We let it boil for about 5 minutes after it comes to a boil. It is important to ensure that the zucchinis are cooked through but not too soft, in order to maintain their crunchy texture. After boiling, we place the hot ingredients into sterilized jars, covering them well with the liquid obtained.
We seal the jars tightly and leave them wrapped in towels until they cool completely. We check that the lids form a slightly concave shape in the middle, indicating they have sealed correctly. Once cooled, we store the jars in a cool, dark place where they can ferment. It is recommended not to open the jars until at least 20 days have passed, to allow the flavors to fully develop.
These zucchini pickles are excellent as a side dish or appetizer, bringing a touch of freshness and flavor to any meal. Enjoy your meal!
