Hot pepper jam

Ingredients: 1 kg red hot pepper, 1 kg sugar, 1 l of 9-degree vinegar

A delicious recipe for spicy pepper jam can add a touch of flavor to your kitchen, turning a simple snack into a memorable culinary experience. Start by preparing the necessary ingredients: you will need hot peppers, sugar, vinegar, and of course, a little love for cooking.

The first step is to ensure that the vinegar is of good quality, as it will influence the final taste of the jam. Place the vinegar in a saucepan and add the sugar. Boil the mixture over medium heat for 30 minutes, stirring occasionally, until the sugar is completely dissolved and the mixture begins to thicken. It is important to pay attention to this step, as the vinegar will reveal its rich flavors during boiling.

Meanwhile, wash the hot peppers under a stream of cold water and let them dry on a clean towel. Here comes an essential step: to avoid burning your skin, I advise you to use surgical gloves while cleaning the peppers. Using a sharp knife, remove the stem, inner veins, and seeds to obtain fine pepper cubes. Cut the peppers into small pieces, ensuring a uniform size for even cooking.

Once the vinegar has boiled and thickened properly, add the pepper cubes to the sugar and vinegar syrup. Let the mixture simmer over low heat for about 40 minutes. It is essential to stir occasionally to prevent sticking and to ensure that the jam cooks evenly. You will notice how the colors intensify and the aroma becomes irresistible, filling your kitchen with a sweet and sour scent.

When the jam has reached the desired consistency, prepare the sterilized jars. You can sterilize them either by boiling in water or in the oven at a temperature of 120 degrees Celsius. Fill the jars with the hot jam, making sure to leave a little space at the edges. Seal them tightly with the lids and place them upside down, covering them with a thicker towel. This will help create a perfect seal and keep the jam fresh for a long time.

After the jars have cooled completely, store them in a pantry, in a dark and cool place, where they will wait to be enjoyed alongside cheeses, meats, or even on a slice of fresh bread. Enjoy this delicious jam and all the combinations it can bring to your meals!
