Preparation time: 20 minutes
Baking time: 30 minutes
Total time: 50 minutes
Number of servings: 12
Ingredients:
For the dough:
- 250 g butter or margarine (at room temperature)
- 250 g sugar
- A pinch of salt
- 6 eggs (separate yolks from whites)
- 250 g flour
- 2 tablespoons cocoa powder
- 1 packet baking powder
- 2 packets vanilla sugar
- 300 g pitted cherries (you can use frozen cherries, from compote, or in their own juice)
- 300 g pitted cherries from cherry brandy
For the cream:
- 2 packets of vanilla Crem Ole
- 700 ml milk
- 100 g butter (at room temperature)
- 2-3 tablespoons sugar
- 1 packet Dr.Oetker whipped cream powder
- 2 packets vanilla sugar
For decoration:
- 200 g dark chocolate
- 5 tablespoons oil
- 50 g white chocolate (for decoration)
- Cherries (for decoration)
Preparation:
1. Preparing the oven and the tray:
Start by preheating the oven to 180°C. Then, prepare a rectangular tray by lining it with parchment paper or greasing it with butter. This step is essential to prevent the cake from sticking, ensuring you can easily remove it after baking.
2. Preparing the dough:
In a large bowl, cream the butter with sugar, a pinch of salt, and vanilla sugar until it becomes fluffy. Gradually add the 6 egg yolks and continue mixing. Once you have a homogeneous mixture, sift the flour together with the baking powder and gently fold them into the butter mixture.
3. Beating the egg whites:
In another bowl, beat the egg whites until stiff peaks form. This step is crucial for giving the cake a fluffy texture. Gently fold the egg whites into the dough mixture to retain the air.
4. Assembling the cake:
Pour half of the dough into the prepared tray. Evenly distribute the 300 g of cherries (mixed from cherry brandy and compote) over the white dough. With the remaining dough, add cocoa powder and mix well. Pour this cocoa dough over the layer of cherries, then add the remaining cherries on top. Cover with a thin layer of dough to protect them during baking.
5. Baking:
Place the tray in the preheated oven and bake for 25-30 minutes or until the cake is golden brown and passes the toothpick test. Let it cool completely before adding the cream.
6. Preparing the vanilla cream:
In a bowl, mix the milk with the two packets of vanilla Crem Ole according to the package instructions. In another bowl, cream the 100 g of butter with sugar and whipped cream powder until it becomes fluffy. Gently incorporate the vanilla cream into the butter mixture to combine the ingredients.
7. Assembling the cake:
Once the cake has cooled, spread the vanilla cream evenly over its surface. Cover the cake with plastic wrap and let it chill in the refrigerator for at least 30 minutes to set.
8. Decorating:
Melt the dark chocolate with the 5 tablespoons of oil either in the microwave or in a double boiler. Mix well until you have a homogeneous mixture. Pour the melted chocolate over the vanilla cream, ensuring it is evenly covered. Let the cake set in the refrigerator.
9. Serving:
Once the cake is completely set, cut it into squares and decorate each piece with grated chocolate and a few fresh cherries. This cake is perfect for serving at a party, a gathering with friends, or simply as a delicious dessert after dinner.
Useful tips:
- Make sure the cherries are well-drained to avoid excess moisture in the cake.
- You can use fresh or frozen cherries, but those from compote provide a softer texture.
- If you prefer a less sweet version, you can reduce the sugar in the cream or use chocolate with a higher cocoa content.
Nutritional information:
A serving of cherry cake with vanilla cream contains approximately 350-400 calories, making it a flavorful choice for a dessert. Cherries are rich in antioxidants, helping to strengthen the immune system and promote cardiovascular health.
Frequently asked questions:
