Universal Pie

 Ingredients: Dough: 200 ml milk, 75 g butter, 25 g fresh yeast (or 1 packet of dry yeast), 3 tablespoons potato flakes, 375 g flour, 1 teaspoon basil (rosemary can be used instead), 10 g salt. Topping: 1 onion cut into eight pieces, salt, ground pepper, 1 larger tomato diced, 1 bell pepper, cheese slices, 100 ml olive oil, 1 tablespoon honey, 2 teaspoons vinegar, 2 tubes of melted cheese, 3 eggs.

To prepare a delicious pie with fluffy dough and a garnish full of flavors, we will start by dissolving the yeast in warm milk. It is important to ensure that the milk is not too hot, as this could affect the yeast's activity. In a large bowl, we will add the flour, then we will integrate the butter, potato flakes, dried basil, and salt. These ingredients will contribute to the texture and flavors of our dough. Once the yeast is completely dissolved, we will add it to the flour mixture and start mixing with the mixer, first on low speed to avoid scattering the ingredients, then we will increase the speed until we achieve a smooth and homogeneous dough.

From the obtained dough, we will break off four pieces the size of a mandarin, which we will set aside. The rest of the dough will be rolled out in the greased tray, which is 40x30 cm, forming an even base. The four pieces of dough will be transformed into long rolls of about 40 cm, and from every two rolls, we will form spirals. These spirals will be placed in the tray diagonally, so we will obtain four distinct triangles.

For the garnish, we will cut the onion into eight parts and salt it, then the pepper will be cleaned of seeds and cut into wider strips. We will cut salami and ham into cubes or thin slices, according to our preferences. The tomatoes will be sliced and then diced, which we will salt a little to enhance their flavor. In a hot pan with olive oil, we will sauté the salted onion until it becomes translucent, then we will take it out on a plate. Next, we will sauté the pepper, which we will remove after it becomes slightly soft. If desired, we can add a mix of Mexican vegetables, which we will sauté as well, adding a little water to help with cooking. After the water has evaporated, we will set the vegetable mixture aside.

For the cheese mixture, we will combine melted cheese with a tablespoon of honey, two teaspoons of vinegar, salt, and pepper to taste, then we will add the eggs and mix well. This mixture will be divided among the triangles formed on the dough in the tray. On top of it, we will place slices of cheese, and the vegetable garnish will be evenly distributed over the triangles, according to everyone's preferences.

After we have arranged everything, we will preheat the oven and place the tray for about 30 minutes, until the pie turns golden and is well baked. It is important to serve it hot, so we can fully enjoy the intense flavors and fluffy texture. This recipe is perfect for a family meal or to impress guests at a special occasion. Enjoy your meal!
