 Ingredients: green salad 1 large onion 1 heaping tablespoon of flour 2-3 tablespoons of sour cream or yogurt 3 eggs lard for the face (1 teaspoon - optional) 1/2 package of bacon (smoked homemade bacon can be used) garlic (to taste) salt 1-2 raw potatoes garlic-flavored croutons 2 tablespoons of oil

To prepare a delicious and comforting soup, start by cleaning the green lettuce leaves, washing them well under a stream of cold water to remove any impurities. Once cleaned, place them in a pot of boiling water to which you have added a teaspoon of salt. Boil the lettuce for about 5-7 minutes until it becomes soft, then remove it and let it cool.

In the meantime, take an onion, peel it, and chop it finely. In a saucepan, heat a few tablespoons of oil, then add the onion and sauté it over medium heat, stirring constantly to prevent burning. The onion should become transparent and slightly golden. After it has sautéed, extinguish the heat with the juice obtained from the lettuce, mixing well to release its flavors.

Put the lettuce back on the heat, then add the sautéed onion mixture to the pot. Let the soup simmer on low heat for 20 minutes for the flavors to combine. Meanwhile, cut the bacon into small cubes and fry them in a pan until crispy. Add the fried bacon to the pot of soup and mix well.

Peel a potato, grate it on the small grater, and add it to the soup. This will help thicken the soup and add a pleasant texture. In a separate bowl, mix the sour cream or yogurt with the egg yolks and a tablespoon of flour, using a whisk to obtain a homogeneous mixture. Thin the mixture with a few ladles of soup broth, then add it to the pot, stirring constantly to prevent lumps from forming.

Beat the egg whites until you get a firm foam, then fry them in a little oil or butter until they become slightly golden. Let them cool, then cut them into small cubes and add them to the soup. Clean a few garlic cloves, crush them, and mix them with a pinch of salt, then thin the paste with soup broth and pour the mixture into the pot.

Season the soup with salt and pepper to taste, then turn off the heat. The soup is served hot, alongside garlic-seasoned croutons that add a crunchy and aromatic note. For an extra flavor boost, you can also add grated parmesan to the bowl, which will melt slightly in the soup, providing a rich and creamy taste. This recipe will not only warm the soul but will also bring a touch of joy to every bowl served!
