Goulash Soup
Ingredients: We are preparing to have on hand: - 2-3 onions, finely chopped - 1-2 tablespoons of lard (2-3 tablespoons of oil) - 1 kg of pork, cut into cubes (if you have some small bones with a bit of meat on them, so much the better. They are boiled first in soup water and will give a very good taste) - salt - pepper - paprika - fresh parsley, finely chopped - 3-4 carrots - 2-3 pieces of parsley root - 1 small white cabbage (the size of a fist) - 1 whole onion - 2-3 potatoes, peeled and cut into cubes - 2-3 tablespoons of oil (for sautéing the vegetables) - 1 tablespoon of vegeta - 1 handful of noodles (or other small pasta) or prepare dumplings from one egg, a little flour, and a pinch of salt (optional and to taste)
In a pot, we begin preparing the recipe by heating a generous amount of lard or oil. We add the finely chopped onion and sauté it over medium heat, stirring occasionally, until it becomes glassy and fragrant. This is the base that will add extra flavor to our dish. Once the onion has changed its texture, we add the meat cut into cubes, which will be fried until it changes color, becoming slightly browned. It is important to stir constantly to ensure that each piece of meat is nicely cooked. We season with a pinch of salt, pepper, and paprika, mixing well to homogenize the flavors. After the meat is well coated with spices, we add enough water to cover it completely. We cover the pot and let it simmer over low heat until the meat is tender and fully cooked. It may be necessary to add a little more water during cooking to maintain a good consistency.
Meanwhile, in a separate pot, we put about 3 liters of water or a previously prepared vegetable broth, which adds extra flavor. When the water reaches boiling point, we add the carrot, parsley, and celery, all cut into rounds and previously cooked in a small amount of oil until they become slightly soft. Then, we add the chopped onion and the whole cabbage, which will release delicious juices into the soup. When all these vegetables are almost cooked, we can add the diced potatoes, which will bring extra substance.
If we want to add noodles or dumplings, we make sure we have prepared the dough from egg, water, flour, and a pinch of salt, mixing until we obtain a thick composition that flows slowly from a fork. These will be added to the boiling soup in the form of drops.
When the vegetables are cooked, we pour the meat mixture into the pot with the vegetables, stirring gently. It is important to taste the soup and adjust the seasonings if necessary. We remove the whole onion and cabbage from the soup, sprinkle chopped green parsley on top for a fresh and aromatic appearance. We take the pot off the heat, cover it with a lid, and let it sit for 5 minutes to combine the flavors. Thus, our dish is ready to serve, offering a hearty and comforting meal, perfect for cool days.
