Chicken Breast with 8 Vegetables

 Ingredients: 1 chicken breast, 10 asparagus spears, 2 garlic cloves, 1 medium onion, 10-15 asparagus spears, 1 red bell pepper, 5-7 broccoli florets, 10-15 green beans, 2 large potatoes (cut into cubes, in 4 or 8 depending on the size of the potatoes), 1 carrot (cut into strips), 1 tablespoon of olive oil.

To prepare a culinary delight, we start with the chicken breast, which we cut lengthwise, resulting in two uniform pieces. Each piece will be pounded with a meat mallet, taking care to thin it out evenly to ensure proper cooking. After we have completed this step, we sprinkle each piece with salt and pepper, thus seasoning the meat to enhance its flavor. Then, we fill each piece with asparagus spears, adding four or six spears depending on the size of the breast. It is important to carefully close the chicken breast using toothpicks so that the filling does not leak during cooking.

In a large skillet, we add the oil, and when it is well heated, we add the garlic cut into small pieces, letting it release its aroma. Then, we add the julienned onion, which will turn golden and provide a special taste to the dish. The next step is to add the stuffed chicken breast rolls, taking care to brown them evenly on all sides. Once the chicken breast has a nice crust, we can start adding the vegetables. We add them in the following order: green beans, asparagus, diced potatoes, carrot (which we prefer to leave crunchier), bell pepper, and finally, broccoli. These vegetables will not only add culinary charm but will also provide a rich palette of vitamins.

To intensify the flavors, we season with salt and pepper to taste, and if you are a fan of spicy flavors, add a bit of finely chopped jalapeño. This ingredient will bring an extra flavor to the dish. We add a cup of water to prevent the ingredients from sticking to the pan and to create steam that will help the vegetables cook evenly. We cover the skillet and let everything simmer for a few minutes, adjusting the cooking time based on how crunchy you prefer the vegetables. In our case, we let everything simmer for another 10 minutes after adding the broccoli, allowing it to become tender while still maintaining its texture.
