Chicken Liver Pâté, in a Glass

 Ingredients: For the filling: 500 g of chicken liver, 2-3 eggs, a tablespoon of sour cream, a lot of greens (parsley, dill, green onion tops). For baking in cups: 2 eggs for each cup with filling.

To prepare a delicious recipe of liver with greens, we start by boiling the livers in a large amount of boiling water, without salt. It is essential that the water is abundant, as this will maintain a constant temperature, even when the livers or chicken breast fillets are added, which have a lower temperature. We let the livers boil for about five minutes, then remove them with a slotted spoon and let them cool.

In the meantime, we take care of the greens. We chop the green onions, including the tails, in a way that provides a pleasant aesthetic contrast, preferably diagonally. This technique adds not only an attractive look but also an interesting texture to the final dish. Once the livers have cooled, we chop them finely, being careful not to use a food processor, as we do not want to obtain a pâté, but a visible composition. We mix the chopped livers with the greens, adding the eggs and sour cream, thus obtaining a homogeneous mixture.

The next step is to butter some heat-resistant glasses. We generously sprinkle the greens inside the glasses, rotating to ensure that the walls are evenly covered. At the bottom of each glass, we place a raw egg, and on top, we place 1-2 tablespoons of the mixture, which we press lightly and smooth out. It is important not to fill the glass to the top, as we will need enough space to add another raw egg over the mixture.

After the glasses are filled, we wrap them in paper and place them in a pot, on the bottom of which we have placed a folded towel. We pour warm or hot water to cover the glasses, but without flooding them. We cover the pot with a lid and simmer on low heat, so that the water gently simmers. The dish is considered ready when the egg on top has set, indicating that the livers have been perfectly cooked.

When we are ready to serve, we remove the contents from the glasses, cutting each portion into quarters, which will give a look similar to that of a cut ice cream. This recipe can be easily adapted, with the filling allowing room for imagination, as long as the ingredients are compatible. Whether you choose to use different types of greens or add other favorite ingredients, this recipe is an excellent base for experimenting and creating a unique and tasty dish.
