Beef Marinade
Ingredients: The proportions are for 1 kg of meat: -1 cup (250 ml) of boiled and cooled water -2/3 cup of wine vinegar (for those who can't stand the smell of vinegar, I have an alternative - 1/2 cup of dry or semi-dry red wine. I use the wine for marinating) -2 bay leaves -10 allspice berries -10 black peppercorns -optional chopped vegetables can be added in rounds or grated: -1 medium carrot, -1 parsley root, -celery root (about the weight of the carrot), -1 onion.
To achieve a perfect marinade, it is essential to pay attention to the details of the ingredients and the preparation method. We start by selecting high-quality meat, whether we opt for chicken, beef, or pork, each having its own characteristics that will influence the final result. In a large bowl, we add the ingredients for the marinade: olive oil, freshly squeezed lemon juice, finely chopped garlic, aromatic herbs such as rosemary, thyme, and oregano, as well as spices like salt, pepper, and sweet or hot paprika, depending on preferences.
We mix all these ingredients with a wooden spatula or a whisk until we obtain a homogeneous composition. It is important to ensure that the salt and spices are well incorporated, allowing the flavors to penetrate evenly into the meat. Once the marinade is ready, it is time to add the meat to the bowl. We make sure that each piece of meat is completely covered by the marinade, to benefit from all the intense flavors.
To facilitate the marinating process, we can use a weight, such as a plate or a heavier dish, which we place over the meat. This will help the marinade penetrate better, especially in the case of thicker cuts of meat. After covering the bowl with plastic wrap or a lid, we place it in the refrigerator, where the meat will marinate for 2 to 4 days. During this time, the flavors will develop and intensify, and the meat will become more tender due to the action of the acids in the marinade.
It is essential not to wash the meat before cooking it, as this could remove the flavors and spices that have penetrated into it. When we are ready to cook it, we can choose from a variety of methods: grilling, baking, or pan-frying. Regardless of our choice, the result will be juicy meat, full of flavor, that will delight the taste buds of anyone. This marinade recipe is ideal for family meals or parties, allowing us to enjoy a delicious and aromatic dish.
