Ajvar - Hot Pepper Paste
Ingredients: -10 hot peppers (the hotter they are, the spicier the paste will be) -3 bell peppers or capia, red, large -1 onion -4-5 meaty tomatoes, peeled -2-3 small zucchinis -salt, to taste -olive oil
To prepare a delicious and aromatic sauce, start by chopping the vegetables you have chosen for the recipe into small pieces. It is important to wash and peel them before cutting to ensure the freshness and hygiene of the dish. Hot peppers, which add an extra spiciness, should not be deseeded or deveined, as these contribute to enhancing the flavors and taste.
In a pan, heat a little oil until it becomes hot, then add the chopped vegetables. Stir constantly to prevent sticking and ensure even cooking. Let them sauté over medium heat, and as they soften, the flavors will begin to reveal themselves. After a few minutes, add between 100 and 200 ml of warm water, depending on the amount of vegetables and the desired consistency. Continue to simmer on low heat, stirring occasionally, until the water reduces and the vegetables turn into a thick, homogeneous sauce.
If you notice that the vegetables are releasing a large amount of juice during sautéing, avoid adding extra water. It is essential to keep control over the consistency; add water gradually if needed, so as not to underestimate the intense flavor of the sauce. Once the sauce is ready, let it cool to room temperature. This sauce can be left chunky for a rustic texture or blended for a smoother consistency.
After it has cooled, transfer the sauce into jars with lids, ensuring they are well sealed. Store the jars in the refrigerator, where the sauce will stay fresh for up to four months.
