Bernaise Sauce
Ingredients: 60 ml white vinegar, 60 ml dry white wine, 1 tablespoon finely chopped onion, 1 tablespoon dried tarragon, salt, pepper, 3 egg yolks, 200 g butter, 1 tablespoon fresh tarragon.
Here is a delicious recipe for a creamy sauce, ideal for accompanying various meat or vegetable dishes. This sauce, with a refined taste and velvety texture, will add a touch of magic to any meal. We start by gathering the necessary ingredients: vinegar, white wine, dried tarragon, egg yolks, butter, salt, pepper, onion, and fresh tarragon.
In a small saucepan, pour 100 ml of vinegar and 200 ml of white wine, adding 1 tablespoon of dried tarragon. Bring the mixture to a boil over medium heat, letting it simmer for about 30 minutes. The goal is to reduce the liquid until only 2 tablespoons of concentrated essence remain. When ready, strain the mixture through a fine cheesecloth to obtain a clear and aromatic liquid, which we let cool slightly.
Meanwhile, we take care of the egg yolks. We take the three egg yolks and whisk them with a pinch of salt in a separate bowl until we obtain a frothy and homogeneous mixture. Here, we add the two tablespoons of reduction we obtained earlier. We transfer the mixture to a double boiler. Using a whisk, we constantly mix, ensuring that the temperature is controlled to prevent the eggs from curdling suddenly. When the mixture begins to thicken and becomes creamy, it is time to start adding the melted butter. It is important to pour the butter in a thin stream while continuously whisking, so it incorporates evenly, giving the sauce a rich and smooth texture.
After we finish adding the butter, our sauce is almost complete. Now it’s time to season it. We add the finely chopped onion, freshly ground pepper, and fresh tarragon to taste. Personally, I prefer to use a medium onion and about 3 sprigs of fresh tarragon, which will provide a vibrant flavor. If the sauce is intended for a beef dish, don’t forget to add a little fresh thyme for extra flavor.
Our creamy sauce is now ready to be served! It can be used to accompany juicy steaks, grilled vegetables, or even fish. Its rich aroma and smooth texture make it a perfect accompaniment to any culinary dish. Enjoy it with pleasure!
