Adjika Spicy Sauce

 Ingredients: 3 large bell peppers, 4 medium tomatoes, 4 large cloves of garlic, 3 hot peppers, seeded, 1 handful of chopped lovage, 1 handful of chopped parsley, 1 medium apple, 1 tablespoon of honey or sugar, 1 teaspoon of salt, 5 tablespoons of apple or grape vinegar or the juice of one lemon, 3 generous tablespoons of thick and sweet quality tomato paste.

Adjika is a delicious condiment that brings an authentic and vibrant taste to any dish. To achieve perfect adjika, start with a selection of ripe, juicy tomatoes that will provide an excellent base. Choose tomatoes of various varieties to add complexity to the flavor. Place a grill pan over medium heat, and once it is well heated, add the tomatoes. Roast them on all sides until the skin becomes slightly charred and starts to peel off. This process not only intensifies the flavor of the tomatoes but also gives them a pleasant texture. After roasting, let them cool slightly, then peel off the skin.

Meanwhile, prepare the other vegetables. The onion, bell pepper, and carrot should be peeled and cut into large pieces. Then, use a blender or meat grinder to turn them into a fine paste. The vegetable mixture will add depth and sweetness to your adjika. In a large pot, combine the peeled tomatoes with the vegetable paste obtained. Add tomato puree to intensify the flavor and let everything simmer on low heat for about 15 minutes.

At the end of this interval, finely chop the garlic and add it to the vegetable mixture. It's also time to add the chopped greens and lemon juice, which will provide an extra freshness. Let everything simmer for another 2 minutes, stirring constantly.

Once the adjika is ready, prepare the jars. Make sure they are perfectly clean and sterilized. Heat the jars in a pot of boiling water for a few minutes, then let them dry. Carefully pour the hot adjika into the jars, filling them to the brim, then seal them with the lids. This preservation method will allow the adjika to keep throughout the winter, providing you with a burst of flavors in your meals.

If you prefer to consume adjika immediately, there is no need to boil it. Simply roast the tomatoes, mash them with the other vegetables, and enjoy a fresh and delicious sauce.
