Coconut Milk

 Ingredients: -a cup of fresh coconut -3 cups of water -a teaspoon of honey/sugar -a pinch of salt

To make a delicious and healthy plant-based milk, start by choosing the right ingredients. A popular option is almond milk, but you can also experiment with cashews, pistachios, or oats. Begin by measuring about 200 grams of nuts or seeds. If you opt for almonds, it is recommended to soak them for at least 8 hours to activate their enzymes. This process will improve digestion and enhance the flavor.

Once soaked, drain the almonds and rinse them well under cold running water. This step is essential to remove any bitter substances. Add the almonds to a blender along with 4 cups of filtered water. If you want to achieve creamier milk, reduce the amount of water to 3 cups. Blend the ingredients on high speed for about 2-3 minutes until the mixture becomes smooth and creamy. It is important to use a quality blender to achieve a fine texture.

After obtaining a uniform mixture, it is time to strain the milk. Using a cheesecloth or a special nut milk bag, pour the mixture into the center of the cloth. Squeeze the corners of the cheesecloth tightly and press hard to extract all the liquid. You will notice that the milk separates from the solid pulp, resulting in a fine and revitalizing drink.

The leftover pulp should not be thrown away. You can dry the pulp in a dehydrator or in the oven at a low temperature of about 40 degrees Celsius. This pulp can later be used in various recipes, such as cakes, cookies, or granola. You can also add the pulp to smoothies or yogurts to improve texture and add extra nutrients.

The resulting plant-based milk can be sweetened to taste with a tablespoon of maple syrup, honey, or a sprinkle of coconut sugar. You can also add vanilla or cinnamon to enhance the flavor. Store the milk in an airtight container in the refrigerator, where it will last for 4-5 days. This plant-based milk is ideal for use in coffee, tea, cereals, or simply consumed as is.
