Ingredients: 2.5 kg of hawthorn berries, 2.5 kg of sugar, 250 ml of rum, 250 ml of vodka, 2 l of double refined alcohol
We wash the cornelian cherries carefully in several waters, making sure to remove any stems or impurities that could affect the final taste of the drink. After we finish washing the cherries, we place them in a plastic container, preferably one that is clean and free of persistent odors. Over the clean cherries, we add sugar, ensuring that we cover them evenly. It is important to mix well to ensure that each fruit is coated in sugar. Then, we cover the container with a clean towel and place it in a warm spot, where the temperature remains constant, for 5-6 days.
During this period, it is essential to stir the contents of the container several times a day. This process will help the sugar to dissolve completely, and the cherries will begin to release juice, creating a natural syrup. At the end of the 5-6 days, when the sugar has melted and the fruits have released enough liquid, we turn our attention to the glass carafe. With great care, we transfer the cherries along with the accumulated juice into the carafe.
Once we have completed this step, we accurately add 250 ml of Rum and 250 ml of Vodka. These alcoholic beverages will help to enhance the flavors and perfectly complement the taste of the cherries. Finally, we measure out 2 liters of double refined alcohol, which will add strength and help extract the flavors from the fruits.
After we have finished this process, we close the carafe very well to prevent any evaporation of the alcohol. It is time to gently shake the carafe, ensuring that all the ingredients are well homogenized. We leave it in a cool place, away from direct sunlight, where the flavors will intermingle for about 3-4 weeks. During this time, it is advisable to shake the carafe from time to time to maintain good circulation of the ingredients and to intensify the maceration process. This drink will have a complex taste, a tempting blend of sweet and sour, perfect for enjoying on special occasions.
