Gizzard and Heart Soup
Ingredients: 400 grams of a mixture of gizzards and hearts, 1 onion, 2 carrots, 1 parsley root, 1 bunch of parsley, celery, noodles, 1 can of whole tomatoes in juice, Maggi borscht, salt
We wash the gizzards and chicken hearts well under a stream of cold water, making sure to remove any impurities or fat. After cleaning them, we place them in a large pot with cold water and a teaspoon of salt, letting them boil over medium heat. It is essential to skim off the foam that forms on the surface, as it contains impurities that can affect the final taste of the soup.
Meanwhile, we take care of the vegetables. We peel the carrots, celery, and parsley root, then cut them into small cubes so they cook evenly and release their flavor into the soup. We also finely chop the parsley stalks, which we will add to the soup for an extra touch of freshness.
Once the meat starts to boil, we add the vegetables to the pot. We leave the onion whole to allow it to impart its flavor into the soup, but after a few minutes of boiling, we remove it, mash it well, and then add it back into the soup. This step will intensify the flavor of the soup and add a pleasant consistency.
After about an hour, we check if the meat and vegetables are cooked. If everything is ready, we add the finely chopped tomatoes, which will give a hint of acidity and a savory taste to the soup. We season with salt to taste and let the soup boil for about 10 more minutes, allowing the flavors to blend harmoniously.
When the time is up, it is time to add the noodles, which will make the soup more substantial and filling. We let everything boil together for a few minutes until the noodles become soft but not overcooked. Finally, to give it a special flavor, we add two tablespoons of borscht, which will bring a pleasant acidity and balance the flavors.
The soup is served hot, sprinkled with freshly chopped parsley, which will add a touch of color and freshness. This gizzard and heart soup is not only tasty but also comforting, perfect for cooler days. Enjoy your meal!
