Homemade Dijon Mustard
To prepare a delicious and aromatic mustard, we start by finely grinding half of the mustard seeds, similar to flour. Using an electric coffee grinder, the process becomes quick and efficient, and the resulting powder will be the base of flavors in our sauce. It is important to ensure that the seeds are ground evenly to achieve a homogeneous texture.
In a glass bowl, we will carefully combine the honey (or sugar), salt (or vegetable), and vinegar. These ingredients will bring a contrast of flavors, and adding beer (or wine or water) will help to fluidize the mixture. Using a whisk, we mix the ingredients well to ensure they are perfectly integrated. It is essential to adjust the proportions of the ingredients according to personal preferences, ensuring that the taste is predominantly sour but balanced with sweet and salty notes.
After achieving a homogeneous composition, we add the natural coloring - turmeric, saffron, or curry, dissolved in a small amount of liquid. This step will not only provide a beautiful hue but will also enrich the flavor of our mustard. We continue with the ground mustard flour and whole mustard seeds, homogenizing the mixture well to ensure that each ingredient is evenly distributed.
To adjust the fluidity of the mixture, we gradually add beer or wine (or water), keeping in mind that, over time, the mustard powder will absorb some of the liquid. It is important to achieve a consistency that is suitable for spreading but not too liquid. Once we reach the desired consistency, we let the mixture sit at room temperature for 2 to 4 hours so that the flavors can develop and blend.
After this period, we transfer the mustard to an airtight jar with a lid and store it in the refrigerator. It is recommended to wait 2-3 days before consuming it, during which time the flavors will intensify, and the taste will become more complex. The mustard can be kept in the refrigerator for 2-3 weeks, thus becoming a perfect accompaniment for various dishes. Being a Dijon-style mustard, it will have a slight spiciness that will perfectly complement salads, meats, or cheeses. Enjoy it with pleasure!
