Baked Zucchini
Ingredients: -2 larger zucchini -500 g mixture of cottage cheese with telemea cheese -1 bunch of fresh dill, finely chopped -300 g of burduf cheese -4-5 tablespoons of sour cream -grated cheese or parmesan -salt -pepper -butter and breadcrumbs for the tray Bechamel sauce -60 g butter -2 tablespoons of flour -500 ml of milk
We start by preparing a heat-resistant dish, which we will generously grease with butter, ensuring it is well covered on all sides. After greasing the dish, we line it with breadcrumbs, creating a crispy barrier that will add a pleasant texture to our dish. Now we turn our attention to the zucchini, which we peel and seed. It is important to choose fresh and firm zucchini for the best flavor. After peeling the zucchini, we grate it using a large grater and then sprinkle it with salt, mixing it well. This step helps to remove excess water from the zucchini, and after a few minutes, we gently squeeze it to obtain a more compact mass.
In a separate bowl, we homogenize the cottage cheese with the telemea cheese, both being mashed beforehand to achieve a fine and creamy composition. We add finely chopped dill, which will give a special aroma to the dish. Now we are ready to start assembling. In the prepared dish, we pour a layer of zucchini, followed by a layer of the cheese mixture. We continue with the layers until we finish all the ingredients, ensuring that the top layer is made of zucchini.
Next, we prepare the sauce. In a pan, we sauté the flour in the heated butter, being careful not to brown it too much to avoid a bitter taste. Once the flour has taken on a slightly golden color, we extinguish the mixture with milk, stirring constantly. We let it simmer, continuing to stir until the sauce thickens and becomes creamy. We remove it from the heat and add the burduf cheese and sour cream, stirring vigorously to obtain a uniform and smooth sauce. It is time to adjust the taste with salt and pepper, according to preference.
With the sauce ready, we pour it evenly over the last layer of zucchini in the dish, ensuring everything is well covered. We generously sprinkle with grated cheese or parmesan to form a delicious crust when baked. We preheat the oven, and once it reaches the right temperature, we place the dish inside. We let it bake until the cheese on top is melted and a beautifully browned crust forms, promising a divine taste.
After the baking time is over, we take the dish out of the oven and let it cool slightly before serving. We recommend accompanying it with a fresh tomato salad, which will add a refreshing contrast and perfectly complement the flavors of the dish.
