Cranberries Sauce

 Ingredients: 250 g fresh cranberries or 150 g dried (sour cherries) sugar to taste lemon zest to taste pears (optional) 200 ml water wine (optional, only if pears are used)

To prepare a delicious and aromatic cranberry sauce, we start by gathering all the necessary ingredients. You will need 200 g of dried cranberries, 200 g of sugar, the zest of a lemon, and a few fresh pears, preferably of the Williams variety, which have a fine texture and a sweet-tart taste.

The first step is to place the cranberries in a pot, then add enough water to completely cover them. Place the pot over low heat, being careful not to boil too quickly, as the cranberries need time to rehydrate and release their flavor. When the water starts to boil, add the sugar and gently stir to dissolve. Now is the perfect time to add the grated lemon zest, which will provide an extra freshness to the sauce.

Continue to boil the mixture until the sauce thickens, having a consistency similar to that of syrup. This may take about 15-20 minutes. It is important to stir occasionally to prevent the mixture from sticking to the bottom of the pot. Once the sauce reaches the desired consistency, remove it from the heat and let it cool slightly in a separate container.

To accompany the sauce, you can prepare the pears. Cut them in half and carefully scoop out the insides, leaving some pulp next to the skin to avoid breaking them. Place the pears in another pot with water and sugar and boil them for about 5 minutes. Then, pour in a glass of white or red wine, depending on your preferences. If you choose white wine, the pears will maintain a light hue, while red wine will color them in an attractive burgundy.

Once the pears are cooked, carefully remove them and place them on a platter. Now you can assemble the dish: serve the cranberry sauce alongside roasted poultry or pork, completing the plate with the cooked pears. This dish will not only impress with its appearance but will also provide a delicious contrast between the sweetness of the pears and the acidity of the cranberries. This sauce is wonderful for adding a touch of elegance to your table, transforming a simple roast into a refined feast.
