 Ingredients: -800-1000 g fish fillet -2-4 tablespoons flour -50-100 g grated Parmesan or cheese -1 bunch fresh tarragon or 1 tablespoon dried tarragon -2 egg yolks -300 g processed cheese, in tube -salt -pepper, freshly ground -oil -fresh parsley, finely chopped, for garnish (if you don't have fresh tarragon) -a few slices of lemon for serving, optional -butter for the dish

To prepare a delicious baked fish fillet recipe, start by carefully washing the fish fillets under a stream of cold water, ensuring you remove any impurities. After washing, drain them well and dry them with absorbent towels. This step is essential as it helps achieve a crispy crust during frying. Cut the fillets into strips about 2.5-3 cm thick so that they cook evenly.

Season the fish strips on both sides with salt, freshly ground pepper, and some of the finely chopped fresh tarragon to add a refined flavor. In a deep plate, put some flour and dredge each fish strip in the flour, ensuring it is well coated. In a large skillet, heat the oil over medium-high heat and add the fish strips, browning them on each side until golden and crispy, which will take about 2-3 minutes per side. This step is crucial for sealing in the juices inside the fish.

Once the fish is browned, carefully transfer it to a previously buttered baking dish to prevent sticking. In a separate bowl, combine the melted cheese with the egg yolks, mixing well until you achieve a homogeneous composition.
