Pies with a waist
Ingredients: Dough: 3 eggs 200 g sugar 200 g yogurt 1/2 tsp salt yeast (as much as for 1 kg of flour) ~ 800 g flour Filling: 500 g cheese 100 - 150 g sugar rum essence 1-2 eggs
The dough is essential for achieving the delicious and fluffy pastries we desire, so let's start with the first step. In a bowl, we add 2-3 tablespoons of flour and pour boiling water over them. We mix vigorously until we obtain a thicker paste, which will form the base of our dough. Once we are done, we let the paste cool. In the meantime, we take care of the yeast. If we are using dry yeast, we mix 2-3 tablespoons of flour with the yeast and let the mixture rest for 10-15 minutes. When the flour paste has cooled, we add this mixture of yeast and flour, diluting it with water, milk, or yogurt until we achieve a consistency thicker than sour cream. Preferably, I used yogurt, which adds a fine flavor to the dough. In this mixture, let’s not forget to add a tablespoon of sugar and ½ teaspoon of salt, which helps improve the taste.
If we choose fresh yeast, the procedure is slightly different. We dissolve the yeast in warm water with a tablespoon of sugar and ½ teaspoon of salt. After letting the scalded flour cool, we pour the dissolved yeast over it and add flour until we obtain a paste similar to the previous one. It is important to let the mixture sit in a warm place for 10-15 minutes to allow the yeast to work its magic and rise.
On the other hand, we can take care of the filling. The cheese is combined with sugar, an egg, and the preferred essence, being well homogenized. The amount of sugar can be adjusted according to everyone's preferences, but it is important to consider how salty the cheese used is. If you are fans of more complex flavors, one idea would be to add dill, a classic ingredient from my grandparents, although I personally do not prefer it. If you want a sweet note, you can add raisins, although I also choose to omit them.
After the dough has risen, we start forming the pastries. We wrap the filling in the dough, making sure they are well sealed. We apply a thin layer of beaten egg on their surface to give them a golden and appetizing color during baking. We place the pastries on a tray and put them in the oven at a low temperature, setting it to level 1 for about an hour, or until they become nicely browned. Finally, we brush the pastries with honey to give them a sweet and shiny note that will delight any gourmet. These pastries are perfect for a snack, a dessert, or even to be enjoyed alongside a cup of hot tea.
