Pork Neck Rolls Stuffed with Cabbage

 Ingredients: - 600 g white cabbage, finely shredded - 6 slices of pork neck, boneless - 1 - 2 tablespoons olive oil - 1 tablespoon fresh thyme or 1/2 tablespoon dried thyme - 1 onion, finely chopped - 5 - 8 tablespoons breadcrumbs - 3 - 5 cloves of garlic, crushed - 1/2 bunch of fresh parsley, finely chopped - 4 - 5 tablespoons grated cheese - 2 - 3 eggs - butter - salt - pepper - oil

To savor a delicious and comforting recipe, start by preparing the cabbage. Cut the cabbage into thin strips, then place it in a large skillet, adding extra virgin olive oil and a few tablespoons of water. Let the cabbage sauté over medium heat, stirring occasionally to prevent it from sticking to the bottom of the pan. You will notice how the cabbage begins to soften and change color, becoming more tender and flavorful. Season with salt and pepper to taste, and continue to sauté until it is fully cooked, which means until it becomes translucent and slightly caramelized. Finally, add half of the thyme, mixing well, then remove the skillet from the heat and let the cabbage cool.

Meanwhile, prepare the meat. Use a piece of pork or chicken, cut into thicker slices. Using a meat mallet, pound each piece so that it becomes even, which will help the flavors penetrate. Season the meat with salt and pepper on both sides. In a separate bowl, combine the breadcrumbs, finely chopped onion, crushed garlic, grated cheese, the remaining thyme, and finely chopped parsley. This mixture will add a crunchy texture and intense flavor to the rolls.

In another bowl, beat the eggs with a little salt, preparing them to coat the meat rolls. Meanwhile, take each piece of meat and dip it, on both sides, in the beaten egg, then in the breadcrumb mixture, pressing lightly to ensure it sticks well. Place the rolls on a plate.

Now it's time to assemble the dish. Take one or two tablespoons of sautéed cabbage and place it on each piece of meat. Roll each piece tightly, sealing the ends and securing them with toothpicks so they do not unravel during cooking. Once you have finished rolling all the pieces, dip them again in the egg, then in the breadcrumbs, to achieve a crispy and delicious crust.

Preheat the oven to 180 degrees Celsius and prepare a baking tray lined with parchment paper or aluminum foil, greased with a little oil or butter. Arrange the rolls in the tray, making sure to leave a little space between them. On top of each roll, add a few pieces of butter that will melt during baking, enriching the flavor of the dish. Bake the rolls for about 30 minutes, turning them halfway through so they brown evenly.

Once they are ready, remove the rolls from the oven and take out the toothpicks. Serve them hot, alongside your favorite side dish and salad, to complete this tasty dish. These rolls are perfect for a family dinner or to impress guests with a comforting and delicious meal. Bon appétit!
