Cocktail Rosettes

 Ingredients: 12 medium radishes (I used black radishes) 2 boiled eggs 1/2 red bell pepper 1/2 small onion 2 lettuce leaves 3 pitted black olives 100g of langoustines or small shrimp 2 tablespoons of mayonnaise 2 tablespoons of barbecue sauce 1 tablespoon of ketchup 1 teaspoon of hot mustard 1 teaspoon of medium mustard 1 tablespoon of brandy salt, pepper

We start by carefully washing the tomatoes, selecting the ripest and most aromatic ones to provide a special taste to our dish. After washing them, we remove the stems and empty the seeds using a sharp knife. It is important to cut the base of the tomato very finely so that it can stand upright on the plate, as presentation is an essential aspect of this appetizer.

In a generous bowl, we will prepare a delicious mixture of mayonnaise, ketchup, barbecue sauce, mustard, and a little brandy. This sauce will add a rich and complex flavor that will enhance the filling of the tomatoes. We mix all the ingredients well to obtain a homogeneous and creamy composition that will bind the other ingredients together.

Now we take care of the filling for the tomatoes. We finely chop the boiled eggs, bell pepper, onion, and olives, being careful to obtain very small pieces, so that each bite is full of flavor. We cut the lettuce into very fine strips to add a crunchy and fresh note to our dish. After chopping all the ingredients, we add them to the bowl with the previously prepared sauce.

To intensify the flavors, we also add a few fresh langoustines that we have boiled earlier. It is important to cut them into small pieces so that they integrate perfectly into our mixture. We carefully mix all the ingredients, being careful not to crush the langoustines too much to preserve their appetizing texture.

Once the filling is ready, we start filling the tomatoes. Using a spoon or a piping bag, we fill each tomato with the delicious mixture. It is time to let our imagination run wild, decorating the tomatoes with thin slices of olives, fresh parsley leaves, or even a few drops of the remaining sauce. Presentation is extremely important, and these details will make the difference.

After we finish filling and decorating the tomatoes, we carefully place them on a platter and let them chill in the refrigerator for a while so that the flavors blend perfectly. We serve this refreshing and tasty appetizer with great appetite, being ideal for a party or festive meal. Enjoy your meal!
