Chocolate Candies with Biscuit Cream and Cherries
Ingredients: 50 g white chocolate, 150 g milk chocolate (plain), 50 g dark chocolate, 150 g petit beurre biscuits, 50 g soft butter, rum essence, 50 ml sour cherry liqueur, 1 packet vanilla sugar, sour cherries from the liqueur.
To create these delicious chocolate truffles with three types of chocolate, start by preparing all the necessary ingredients and utensils. It is essential to have quality white chocolate, milk chocolate, and dark chocolate on hand, as well as biscuits, rum essence, vanilla sugar, and soft butter. An additional surprise ingredient is the pitted cherries, which will give a special flavor and a touch of acidity that will balance the sweetness.
Begin by melting the three types of chocolate in separate bowls using the bain-marie method. Make sure the water in the pot does not touch the bottom of the chocolate bowls, as too high a temperature can ruin the texture of the chocolate. Heat the chocolate slowly, stirring constantly until it melts evenly and becomes fluid. This is the stage where the magic begins, and the aroma of chocolate will fill your kitchen!
Once the white chocolate has melted, take a silicone mold and, using a spoon or spatula, pour a thin layer of white chocolate on the bottom of the mold. Then, you can create interesting patterns, such as spirals or stripes, for an attractive look. Place the mold in the refrigerator for about 10 minutes so that the chocolate hardens.
After the white chocolate has hardened, take the mold out of the refrigerator and coat the bottom and sides with milk chocolate, ensuring that no areas are left uncovered. This layer will form the base of your truffles. Put the mold back in the refrigerator for another 15 minutes.
In the meantime, you can prepare the filling. Crush the biscuits in a bowl using a mixer or a plastic bag and a rolling pin until they become fine crumbs. Mix the biscuits with the rum essence, vanilla sugar, and soft butter until you obtain a homogeneous composition that is easy to mold.
Once the milk chocolate base has hardened, take the mold out of the refrigerator and add a pitted cherry in each compartment. Instead of the pit, place a cube of white chocolate for a pleasant contrast. Cover the cherries with the biscuit filling, pressing gently to ensure they settle well. Finally, pour the melted dark chocolate over the filling, making sure to completely cover each truffle.
Leave the truffles in the refrigerator for an hour so that they harden well and become easy to remove from the mold. After the time has expired, carefully remove the truffles from the silicone mold and enjoy the delicious combination of chocolate, biscuits, and cherries. These delicacies are perfect for serving on special occasions or simply to satisfy a sweet craving.
