Champagne Biscuits
Ingredients: eggs 6 pcs sugar 60 g flour 120 g powdered sugar
To make a delicious meringue recipe with a light and airy texture, we will follow the steps carefully, ensuring that every detail is respected. We start by separating the egg whites from the yolks, being careful that not even a drop of yolk gets into the whites, as this would prevent proper whipping. In a clean, dry bowl, we beat the egg whites at medium speed until they begin to form small bubbles. Then, we gradually add the sugar, one tablespoon at a time, continuing to mix at high speed. It is essential that the sugar dissolves completely, and the foam becomes glossy and firm, reaching the stage of "peaks."
Once the egg whites are ready, we move on to preparing the yolks. In another bowl, we mix the yolks until they become homogeneous and slightly creamy. Now, using a spatula, we carefully fold the egg white foam into the yolks, using gentle up-and-down motions to maintain the air in the mixture. This technique will help achieve a fluffy texture in the final product.
After obtaining a homogeneous mixture, it is time to add the sifted flour. Sifting the flour is essential to avoid lumps and to achieve a fine consistency. We incorporate the flour with the help of a spatula, being careful not to mix too vigorously, so as not to lose the air in the composition.
Once the dough is prepared, we turn our attention to the baking tray. We place a sheet of parchment paper on a tray. Using a piping bag, we pipe the meringues into sticks about 7-8 cm long, leaving enough space between them to allow for expansion during baking. After we finish forming the sticks, we sift powdered sugar on top, giving an elegant appearance and a sweet aroma.
To remove the excess sugar, we take the parchment paper by two corners and gently shake it, ensuring that only an even amount of sugar remains on the surface. Now, we place the tray in the preheated oven at a moderate heat. Baking will take about 15-20 minutes, during which the meringues will develop a slightly crispy crust on the outside while remaining soft and fluffy on the inside.
Once they are ready, we take the meringues out of the oven and let them cool on a rack. It is recommended to present them paired, filled with chocolate mousse or vanilla cream, to add an extra flavor. These meringues are perfect to be served as a dessert on a special occasion or simply to indulge yourself on an ordinary day. Enjoy!
