Quick rising dough is a versatile and delicious recipe, perfect for use in various pastry dishes. We start by preparing the dough, ensuring that all ingredients are at room temperature, as this will facilitate the rising process. Mix 500 g of flour with 10 g of salt, 25 g of sugar, and 10 g of dry yeast. Gradually add 250 ml of warm water and 50 ml of sunflower oil, mixing until you obtain a smooth dough. Knead the dough for about 10 minutes until it becomes elastic and smooth.

After kneading the dough, let it rise in a warm place, covered with a clean towel, for 30-45 minutes or until it doubles in volume. Then, divide the dough into 16 small pieces, carefully forming balls. These balls should rest for 10 minutes, covered with a damp cloth, to prevent drying out.

After this rest, roll each ball of dough into a circle about 5 mm thick, using a rolling pin. This is the time when you can add a touch of flavor to the preparation. Brush each circle of dough with a little soft butter, and for a vegan option, use apricot jam or a drizzle of olive oil. Evenly sprinkle about ½ teaspoon of sugar and a generous amount of cinnamon to add an enticing aroma.

Roll each circle of dough into a log, making sure the edges are well sealed. Bring the ends of the log towards the center, forming a snail shape, then turn the log 180 degrees. Cut the log in the middle from both sides, leaving 1 cm uncut in the center, to create a fluttering effect. Gently pull apart the edges, twisting the cut parts slightly to give an attractive look.

Carefully transfer the rolls to a baking tray lined with parchment paper. Brush the surface with a lightly beaten egg yolk and also sprinkle brown sugar for a caramelized taste. If you are vegan, you can use a black tea infusion or skip this step. Place the tray in the preheated oven at 180 degrees Celsius and bake for about 30 minutes or until the dough is beautifully browned and puffed.

Once the rolls are baked, remove them from the oven and let them cool on a rack. These delicious treats can be served warm or at room temperature, making them ideal for snacks, breakfast, or dessert. Enjoy them alongside a cup of tea or coffee and savor their fluffy aroma and texture.
