Boiled Corn - The Sweetness of Childhood
Ingredients: 2 dried corn cobs (stored from autumn) sugar to taste (honey or salt, according to preference) nuts (optional) cinnamon (optional) salt to taste
Boiled corn is a simple yet flavorful delicacy that reminds us of sunny summer days. It all starts with choosing fresh and juicy corn kernels, carefully detached from the cobs. Once you have managed to obtain the corn kernels, the next step is to wash them thoroughly. This is essential to remove any impurities or residues that may have remained on them. After washing, place the kernels in a bowl of water and let them soak overnight. This process not only helps to rehydrate the kernels but also to remove unwanted substances.
The next day, drain the water and rinse the kernels again. Then, transfer them to a larger pot, making sure to cover them with fresh water, about four palms above the level of the kernels. Put the pot on low heat so that the corn cooks evenly. The boiling time is about two hours; however, if you use a pressure cooker, this time is significantly reduced to just one hour. In the last ten minutes of cooking, add a pinch of salt and a little sugar to enhance the natural sweetness of the corn.
Corn is considered boiled when the kernels become "fluffy," meaning they increase in volume and become soft but do not crush. Once boiled, corn can be served in cups, and each of us has our preferences. Some choose to add sugar or honey for a sweet and comforting taste, while others prefer the combination of melted butter with salt, which provides a salty and creamy dimension. Personally, I believe the best combination is with bee honey and crushed nuts sprinkled on top, adding a crunchy and aromatic note.
Another wonderful aspect of this dish is the juice that the kernels leave, which can be enjoyed as a natural and pleasant refreshment. Boiled corn is not a complicated or sophisticated dessert, but it is precisely this simplicity that makes it so special. It is perfect for fasting days, as well as in the cold season, not just in the warm summer or autumn days.
