Meringues with Egg Yolk Cream

 Ingredients: 4 eggs, 300 g sugar, food coloring or cocoa (optional), lemon juice, other flavors (coconut, walnut, ground almonds, etc.), oil and flour for greasing the pan

To create a delicious recipe for meringues filled with egg yolks, we will start by carefully separating the egg whites from the yolks. This is an essential step, as the egg whites need to be whipped to achieve the airy and light texture characteristic of meringue. In a large bowl, we add the egg whites and begin to beat them with an electric mixer on medium speed until they start to form soft peaks. Then, we gradually add the lemon juice, between 150-200 g of sugar, and two to three tablespoons of cold water. This mixture will begin to become a glossy and firm meringue, so we take our time and continue to beat until stiff peaks form.

If we want to play with colors, we can divide the meringue into two equal parts, adding food coloring of two different colors to each half or, for a chocolate note, a tablespoon of cocoa. This detail will not only add an attractive visual aspect but also a delicious flavor.

We prepare a baking tray, greasing it with oil and dusting it with flour, ensuring it is evenly covered. Using a spoon, we place the whipped egg whites onto the tray, forming small meringue portions. It is important to leave a space of 2-3 centimeters between the meringues, as they will expand during baking.

We place the tray in the preheated oven and bake the meringues for about 8 minutes until they become fluffy and slightly golden. After the time is up, we take the tray out of the oven and let the meringues cool for a few minutes on the stove, keeping them warm to prevent them from collapsing.

In the meantime, we prepare the yolks. They are mixed with 150-200 g of sugar, and optionally, we can add a little cocoa and a few drops of lemon juice for a more intense flavor. We mix well until the sugar is completely dissolved and the mixture becomes creamy.

Finally, we take two meringues and stick them together with the yolk and sugar mixture, thus creating a dessert that not only looks superb but also tastes exceptional. These meringues filled with yolks are perfect to be served on any occasion, being easy to prepare and extremely tasty.
