This rustic cabbage pie is a traditional dish that brings the authentic taste of grandma to your plate. A perfect combination of flaky dough and flavorful sautéed cabbage filling, ideal for impressing family or friends. Let’s see how we can achieve a perfect pie step by step.
Ingredients for the dough:
- 500 g flour
- 200 ml warm water
- 100 ml sunflower oil
- 1 teaspoon salt
- 1 packet of dry yeast (or 25 g fresh yeast)
Ingredients for the filling:
- 1 small cabbage (1.5-2 kg), finely chopped
- 80 ml sunflower oil
- 1-2 tablespoons salt (to taste)
- Freshly ground pepper
- 1 large onion, finely chopped (optional)
- 1 teaspoon cumin (optional)
Preparation method:
1. Preparing the dough: In a large bowl, mix the flour with the salt. In another bowl, dissolve the yeast in warm water and let it sit for 5-10 minutes until it becomes frothy. Add the oil and mix well. Pour the yeast mixture over the flour and knead into a smooth dough. It should be elastic and slightly sticky. If it is too dry, you can add a little water, and if it is too wet, add more flour. Cover the dough with a towel and let it rise for 30 minutes in a warm place.
2. Preparing the filling: In a large skillet, heat the oil and add the onion if you choose to use it. Sauté until golden, then add the chopped cabbage. Season with salt, pepper, and cumin if desired. Sauté the cabbage over medium heat, stirring occasionally, for 20-30 minutes until it becomes soft and sweet. Make sure it doesn’t burn by adding a little water if necessary. Finally, let the filling cool.
3. Assembling the pie: Preheat the oven to 180°C. Divide the dough into two equal parts (one for the base and the other for the top). Roll out the first part on a floured surface, forming a thin disc. Place it in a greased baking dish. Spread the cabbage filling evenly over the dough, then roll out the other part of the dough and cover the filling. Seal the edges with your fingers or a fork.
4. Baking: Make a few small cuts on the surface of the pie to allow steam to escape. Bake the pie in the preheated oven for 40-45 minutes, or until it becomes golden and crispy.
5. Serving: Let the pie cool slightly before cutting. It can be served warm or at room temperature, accompanied by fresh sour cream or a yogurt sauce for an extra flavor boost.
Practical tips:
- You can add other vegetables to the filling, such as carrots or mushrooms, to diversify the flavor.
- If you prefer a spicier version, add some chili flakes to the filling.
- Make sure the cabbage is well sautéed to avoid excess water in the pie.
