Brown Sauce (Spanish)
Ingredients: 4-5 tablespoons of oil, 75 g flour, 3 carrots, 1 parsley root, 1 celery stalk or 50 g root, 2 large onions, 3-4 cloves of garlic, 2 bay leaves, pepper, thyme, 50 g tomato paste, 500 g worthless bones (or bone broth or chicken broth), salt
To prepare a delicious and aromatic sauce, the first step is to ensure that the vegetables used are fresh and of good quality. Therefore, we start by carefully washing the carrots, onion, celery, and bell pepper, removing any impurities or dirt. After cleaning them, we cut them into larger pieces than usual to allow them to maintain their shape and texture during cooking. This step is crucial because the vegetables will add not only flavor but also a splash of color to the final dish.
In a deep pot, we heat the oil over medium heat. Once the oil is well heated, we add the flour, stirring constantly with a wooden spoon. It is essential not to rush this step; toasting the flour helps develop flavors and achieve a finer texture. Even though I chose to skip this step, it is important to mention that toasting the flour adds a depth of flavor to the sauce.
After the flour is well toasted, we add the chopped vegetables and let them sauté together with the flour. Here, we add our favorite spices, such as pepper, paprika, or oregano, and a teaspoon of salt. It is important to stir frequently to prevent the ingredients from sticking to the bottom of the pot and to ensure even cooking.
The next step is to add bone broth or, in its absence, water. I used chicken broth, which adds extra flavor. If you choose to use bones, make sure to skim them constantly to remove impurities, and the sauce should simmer for about 3 hours. If using chicken broth, the simmering time is reduced to about 30 minutes, making the recipe quicker and more accessible.
Once the vegetables are well cooked and have released their aroma, the sauce is strained to achieve a smooth consistency. Although I chose not to puree the vegetables, preferring to use them as a garnish, this step can be essential if you want a creamier sauce. The resulting sauce can be used as a base for various dishes or as an ingredient in other sauces, adding flavor and complexity. This simple yet flavorful recipe can transform any dish into a memorable culinary experience.
