Bean (Borlotti) with Sausages

 Ingredients: For 2 servings: 2 plates of fresh, shelled beans 2 medium carrots 1 stalk of celery 1 tablespoon of chopped onion * 1 teaspoon of tomato paste 2 sun-dried tomatoes preserved in oil, chopped (or in their absence, 1-2 peeled tomatoes diced) salt. Oil 2 bay leaves

To prepare a delicious recipe of beans with sausages, we start by ensuring we have all the necessary ingredients at hand. The first step is to boil the beans in a large pot with cold water, enough to cover them with an extra palm. We also add the peeled carrots, the celery stalk, a bay leaf, and a pinch of salt to the water. These ingredients will not only give flavor to the beans but will also contribute to a pleasant aroma of the final dish. We let the beans boil until they become soft, then we drain them, keeping the carrots aside, which we cut into rounds.

In a saucepan or a deep skillet, we add a tablespoon of oil. It is important to put the onion in the cold oil to avoid burning it. On very low heat, we let the onion sauté, stirring occasionally, until it becomes transparent and slightly golden, without burning. This will add a sweet and aromatic base to our dish. Once the onion is ready, we add the slices of sausage – a fresh, well-seasoned pork sausage that will bring extra flavor. We let the sausages cook until they are lightly browned, releasing their aromas.

After the sausages are browned, we add the tomato paste. This will intensify the flavor and give a beautiful color to the sauce. We continue to stir well for about two minutes, so the aroma of the tomatoes perfectly integrates into the mixture. Then, we add the boiled beans, the sliced carrots, the chopped sun-dried tomatoes, the bay leaf, and enough water to cover all the ingredients. It is essential to mention that, in my case, I did not add salt, as the beans were already boiled in salted water, and the sausage has a strong, salty, and seasoned taste.

However, it is good to taste the dish and, if deemed necessary, to add salt towards the end of cooking. We let the dish simmer on low heat until the sauce reduces and thickens, and the flavors come together in a delicious symphony. Finally, we can serve this dish with a garnish of freshly chopped parsley, which will add a note of freshness and color. Don't forget to savor every bite, enjoying the authentic and comforting taste of this traditional dish.
