Mushroom Soup – A Delicious Journey into the World of Natural Flavors

Mushroom soup is a classic recipe, loved by many, but few know that this delicacy has deep roots in culinary traditions. It is a dish that combines the simplicity of ingredients with the depth of flavor, offering a comforting meal perfect for any occasion. Even if you don't consider yourself a soup lover, this recipe will change your mind. It is a culinary experience worth discovering, and I am here to guide you step by step!

Preparation time: 15 minutes
Cooking time: 40 minutes
Total time: 55 minutes
Number of servings: 4

Ingredients:
- 500 g fresh mushrooms (champignon or pleurotus recommended)
- 3 green onions (or one medium onion, if you prefer)
- 2 bell peppers (preferably different colors for a nice appearance)
- 1 slice of celery (approximately 50-75 g)
- 1 can of diced tomatoes in juice (400 g)
- 1 teaspoon of Italian herbs (basil, oregano, rosemary)
- Salt and pepper to taste
- Bors (approximately 500 ml, to taste)
- 2 handfuls of wide noodles (preferably made from wheat flour)
- 1 teaspoon of sweet paprika
- Fresh lovage, chopped (for serving)
- Fresh parsley, chopped (for serving)
- 2 medium carrots

Preparation:

1. Prepare the ingredients:
- Start by cleaning all the vegetables. Slice the green onions thinly, dice the carrots, and cut the bell peppers into strips. If using a regular onion, make sure to chop it finely.
- Clean the mushrooms of the outer skin. Chop half of the mushrooms into small cubes and slice the other half. This will contribute to varied textures in the soup.
- Dice the celery into small cubes to release its aroma.

2. Sauté the vegetables:
- In a large pot, heat a little olive oil over medium heat. Add the onion and sauté it with two tablespoons of water, stirring occasionally, until it becomes translucent (about 4-5 minutes).
- Add the carrots, bell peppers, celery, and chopped mushrooms. Continue to cook, stirring occasionally, until the vegetables start to soften (10-15 minutes).

3. Boil the soup:
- Add the remaining sliced mushrooms to the pot and cover with water (approximately 1.5-2 liters, depending on how thick you want the soup). Add salt, pepper, and Italian herbs. Let the soup simmer on low heat, covered, for 20 minutes.
- After this time, add the paprika and diced tomatoes in juice. Then, add the noodles and let it boil for another 10 minutes until the noodles are cooked.

4. Sour the soup:
- Separately, in another pot, boil the bors for 5-10 minutes. Then, add it to the mushroom soup and mix well. Taste and adjust the salt if necessary.
- Before serving, sprinkle the chopped fresh lovage and parsley on top for extra flavor.

5. Serving:
- The soup is served hot, with a spoonful of sour cream on top, which will add a creamy appearance and balance the flavors. It is delicious alongside a slice of fresh bread or crispy croutons.

Useful tips:
- Types of mushrooms: You can experiment with different types of mushrooms, such as shiitake or portobello, to create a unique flavor.
- Vegan option: For a vegan version, use plant-based sour cream and omit the bors.
- Hot or cold: The soup can be enjoyed hot or cold, depending on your preferences, making it perfect for summer days.

Conclusion:
Mushroom soup is not just a comforting dish but also a rich source of nutrients. Mushrooms are an excellent source of plant-based protein, fiber, B vitamins, and antioxidants. This soup can be a healthy choice for a light lunch or dinner.

The combination of flavors and textures makes this soup a versatile dish that pairs perfectly with a fresh seasonal salad or a glass of dry white wine. Don't forget to share this recipe with your friends and enjoy the moments spent together at the table!

Enjoy your meal!
