Baked Potatoes

A long time ago, I had the opportunity to watch a cooking show where an experienced chef offered valuable tips to avoid potatoes sticking to the baking tray. It seems that the secret lies in preheating the tray before adding the ingredients, and I was delighted to discover that this technique really works. It is essential to use a tray that can withstand high temperatures, and the ceramic one I have turned out to be perfect for this recipe.
To start, preheat the oven to 475°F (250°C), and as soon as it reaches the desired temperature, place the empty tray in the oven for about 5-10 minutes. It's important not to add anything to the tray at this moment, as the goal is to create a hot surface that will help the potatoes brown evenly and not stick. Once the tray is well heated, carefully take it out of the oven and spray it with olive oil spray, making sure the entire surface is covered.
In the meantime, prepare the potatoes. They should be peeled, washed with cold water, and dried well. Then, cut them in half lengthwise and each half into thin crescent-shaped slices. Place the potato slices in a bowl and add olive oil, salt, pepper, fresh rosemary, and a few cloves of garlic, depending on your preferences. Mix well to ensure that each potato slice is evenly coated with the spices.
Once the tray is ready, transfer the potatoes to the tray, making sure to arrange them so that they do not overlap. This will allow each slice to brown perfectly. Place the tray in the oven and let the potatoes bake for 30 to 40 minutes, depending on your oven's power. To achieve a crispy texture, take the tray out of the oven every 10 minutes and turn the potatoes so they brown evenly.
Check them constantly, as each oven may vary. Once they are browned to your liking, take them out of the oven and let them cool for a few minutes before serving. Now, you can enjoy these delicious, perfectly crispy potatoes that are ideal as a side dish or a snack. Enjoy your meal!
