- 1 l vinegar (preferably wine vinegar for a refined taste)
- 500 g sugar (you can use brown sugar for a deeper flavor)
- 3 tablespoons of salt (about 1 tablespoon for each liter of liquid)
- 4 bay leaves
- 4 celery leaves (fresh, for an extra touch of freshness)
- 10 peppercorns (black or white, as preferred)
- 10 mustard seeds
- 2-3 carrots (sliced for a crunchy note)
- 1 cauliflower (optional, cut into small florets for variety)

Preparation Instructions:

1. Preparing the Peppers: Wash the peppers well under cold running water. Cut them into quarters or slices, depending on your preference. Remove the seeds and core for a pleasant texture.

2. Preparing the Marinade: In a large pot, add water, vinegar, and sugar. Place the pot over medium heat and stir until the sugar completely dissolves. Then, add salt, bay leaves, celery leaves, peppercorns, and mustard seeds. Let the marinade boil for about 10 minutes, allowing the flavors to meld.

3. Adding the Peppers: After the marinade has boiled, add the cut peppers to the pot. If desired, you can also add the carrots and cauliflower to create a colorful and diverse mix. Boil everything for 5-10 minutes, stirring gently, until the peppers start to soften.

4. Bottling: Prepare sterilized jars. Fill each jar with the mixture of peppers and marinade, leaving a small space at the top. Ensure all ingredients are covered with liquid. Seal the jars with airtight lids.

5. Final Step - Sterilization: Place the jars in a large pot of water, making sure the water covers the jars up to their tops. Boil for 20 minutes to ensure they are properly preserved. Allow the jars to cool completely on a clean towel.
