Sweet Chili Jam

To prepare a hot pepper jam with an intense flavor and a pleasant texture, as well as to turn a simple recipe into a memorable culinary experience, follow these detailed steps.
The first step is to take care of the peppers. Choose fresh hot peppers, preferably from various varieties, to obtain a combination of flavors. Carefully remove the seeds, as they can add a bitter note. Wash them well under a stream of cold water, ensuring no impurities remain. Even if you can't remove all the seeds, don't worry; they will add a rustic touch to your jam jar.
In a pot, add a sufficient amount of vinegar and sugar. Boil the mixture over medium heat, stirring constantly, until the sugar completely dissolves and a thick syrup forms. This process may take about 30 minutes, but patience is key! Once the syrup is ready, it's time to take care of the peppers.
Start by cutting them into large pieces, then consider the idea of mashing them. If you want a finer texture, you can use an immersion blender. At this stage, you can play with the consistency by adding more or less of the syrup mixture, depending on how sweet you want your jam. If you prefer a more rustic texture, leave them whole. Place them in the boiled syrup and let them simmer for about 10 minutes until they soften.
After the peppers have softened, use the immersion blender to mash them well, achieving a smooth paste. Continue to boil the jam over medium heat, stirring occasionally to prevent sticking. It is important to be patient at this stage, as the jam needs to reach the desired consistency, which may take another 30 minutes.
When you think the jam is ready, prepare clean, dry jars. Carefully pour the hot mixture into the jars, leaving a little space at the top. Put on the lids and turn them upside down. Cover them with thick towels to cool slowly, a process that helps with perfect sealing. Leave them like this until morning, when you will discover a delicious jam with a spicy aroma and an unmistakable taste.
