Cannelloni with spinach and ricotta
To prepare these delicious spinach and cheese pasta, we start by preparing the necessary ingredients. We finely chop a medium onion and a few cloves of garlic, which we will sauté in a non-stick pan. We add a little water and olive oil to prevent burning and to enhance the flavor. We stir constantly until the onion becomes translucent and takes on a pleasant golden hue. This process will add depth and flavor to our mixture.
Meanwhile, we wash 300 grams of fresh spinach well, then chop it finely. Once the onion and garlic are sautéed, we add the spinach to the pan. It will quickly reduce in volume, so don’t worry if it seems like a lot at first. We pour in a little water, cover the pan with a lid, and let the spinach simmer gently until it is completely wilted. After it cools a bit, we transfer the mixture to a large bowl.
In this bowl, we add 250 grams of ricotta, but if you want an alternative, you can mix cottage cheese with grated cheese. We beat two eggs and add them to the mixture, stirring well to achieve a smooth consistency. We season the mixture with salt and pepper to taste, but feel free to add other spices like nutmeg or oregano for extra flavor.
Now, it’s time to prepare the pasta. We use pasta sheets that can be filled, and with the help of a small spoon or a bag with a cut corner, we fill each sheet with the spinach and cheese mixture. We fold the sheets and carefully place them in a baking dish. If you don’t fill them all, the rest can be frozen in a container for later use.
To finish the dish, we prepare a simple sauce from crushed tomatoes or sour cream, which we pour over the pasta, making sure it is well covered. We place the dish in a preheated oven at 180 degrees Celsius and let it bake for 40 minutes. After this time, we sprinkle grated Parmesan on top to give it a rich flavor and a golden crust, and let it bake for another 10 minutes. Finally, we take the dish out of the oven, let it cool slightly, and serve with joy. This pasta is truly delicious and will surely become a favorite for everyone!
