Zucchini Salad I
Whole zucchinis are washed with cold water, taking care to remove any impurities from their surface, to ensure that the final dish will be not only tasty but also healthy. After being well cleaned, the zucchinis are sliced into pieces about 1 cm thick, to allow for even frying and a pleasant texture. Once sliced, they are sprinkled with coarse salt, which will help draw moisture out of the zucchinis and enhance the flavors. Let the zucchini slices sit for 30 minutes, during which the salt will act and soften the zucchinis, preparing them for frying.
After this interval, place a pan over medium heat and add plenty of oil, so that the zucchini slices are partially covered. When the oil is well heated, carefully add the zucchini slices, being careful not to overcrowd the pan to allow for even frying. Fry the zucchinis until they turn golden on both sides, which will take about 3-4 minutes on each side. When ready, remove them with a spatula and place them on a plate. It is important that the oil does not drain completely, as it will contribute to flavoring the salad.
Next, add thinly sliced garlic over the zucchinis, which will bring an extra flavor and unmistakable aroma. Sprinkle a little extra salt to balance the flavors, and then add a splash of balsamic vinegar. This will bring a pleasant contrast between the sweetness of the fried zucchinis and the acidic notes, making the dish more interesting. Mix well to combine the ingredients, ensuring that each slice of zucchini is well coated.
After mixing everything, cover the plate with a lid or plastic wrap and let it rest for 30 minutes. This step is essential as it allows the flavors to meld, and the zucchinis to absorb the tastes of the garlic and vinegar. In the end, you will have a salad of fried zucchinis, with a crunchy texture and delicious flavor, perfect as a side dish or appetizer. Serve it at room temperature to fully enjoy every bite!
