Spinach Puree with Fried Eggs

 Ingredients: -500 g fresh spinach -1 tablespoon flour -30 g butter -1 glass of milk (250 ml) -2-3 cloves of garlic, pressed -2 eggs per person -oil -seasoning -salt -pepper -paprika

Wash the spinach thoroughly in several waters to remove any impurities or sand. Once washed, steep it in boiling, slightly salted water to preserve its vibrant color and nutrients. Meanwhile, prepare the white sauce, which will add a special creaminess to the dish. In a saucepan, bring 2/3 of the milk to a boil. With the remaining cold milk, dilute the flour, mixing well to avoid lumps. Mix all the ingredients well, seasoning with salt and pepper to taste. Let it simmer for a few minutes, making sure to stir occasionally. If the puree seems too thick, you can add a little of the water in which the spinach was boiled or some milk until you achieve the desired consistency. Once the puree is ready, remove it from the heat and keep it warm.

In a separate frying pan, heat the oil and fry the eggs, ensuring that the whites are well set while the yolks remain soft and creamy.
