Plum and Apple Jam with Lemon Flavor
Plums and apples are delicious fruits, and when transformed into a flavorful jam, they become a true delicacy that can enrich any meal. We start the process by thoroughly washing the fruits to remove impurities. Soak the plums and apples in water with baking soda, using one tablespoon of baking soda per basin of water. By leaving them in this solution for about 15-20 minutes, we ensure they are clean and ready to be turned into jam. After they have soaked, rinse them well under running water.
The next step is to remove the pits from the plums and to clean the apples of the seed core. It is important to ensure that the fruits are cut into small cubes, so that the cooking process is even. In an enameled pot, place a layer of fruit cubes followed by a layer of sugar. Continue alternating layers of fruit and sugar until all ingredients are used. This process will allow the sugar to melt and blend with the fruit juice, creating a delicious base for the jam.
Once you have arranged all the ingredients in the pot, place it on high heat. This first step is essential to start the cooking process and facilitate the melting of the sugar. Once the sugar has melted, add the lemon juice, which not only adds a note of freshness but also helps preserve the color and flavor of the jam. Once everything has started to boil, move the pot to the lowest heat and let it simmer for about 50 minutes. This will allow the flavors to develop and the fruits to transform into a smooth and delicious paste.
While the jam is boiling, it is time to sterilize the jars and lids. Place them in a pot of water that completely covers them and boil for 10-15 minutes, starting from the moment the water begins to boil. After they have been sterilized, remove them onto a clean towel and let them dry. Once the jam has boiled sufficiently, it's time to give it one last boil to ensure it is perfectly set.
Pour the hot jam into the sterilized jars, filling them carefully. Seal them with screw lids and turn them upside down, covering them with tablecloths or blankets to create a vacuum effect. Leave them like this for 30 minutes, and then turn them back to the normal position, listening for the click, a sign that the vacuum has formed. Leave the jars covered until the next day, when you can store them in the cupboard, where they will retain their aroma and flavor for a long time. This plum and apple jam is not only a delight for the taste buds but also an excellent way to preserve seasonal fruits.
