- 1 kg fresh green beans
- 2 medium carrots

- 1 sour cream (200-250 g)
- 3-4 tablespoons of oil
- 3-4 tablespoons of flour
- Salt and pepper to taste
- 1 egg
### Instructions:
1. Preparing the ingredients: Start by cleaning the green beans. Snap off the ends and cut the beans into pieces about 3-4 cm long. Wash them well under cold running water. Peel the carrots, onion, and celery, then slice the carrots thinly, chop the onion into small cubes, and cut the celery into cubes or strips.
2. Boiling the vegetables: In a 4-5 liter pot, add about 2 liters of water. Bring the chopped carrots and onion to a boil. When the water starts to boil, add the green beans and let everything simmer over medium heat until the beans become tender, about 15-20 minutes.
3. Preparing the roux: In a pan, heat the oil and add the flour, stirring constantly. The roux should turn golden but not burnt. Once it has a pleasant color, add the tomato juice and mix well until a creamy paste forms. You can also use tomato paste for a more intense flavor, and the tomato juice adds a touch of freshness.
4. Combining the ingredients: When the beans are cooked, add the chopped celery and let it boil for another 5 minutes. After this, pour the roux obtained in the pan into the pot with the soup, mixing well.
5. Finishing the soup: Let the soup simmer on low heat for another 10-15 minutes. At this point, add the sour cream diluted with a little cold water, making sure no lumps form. Season with salt and pepper to taste.
6. Adding the egg: When the heat is off, beat the egg in a bowl and add two ladles of soup. Mix well, then pour this mixture into the pot with the soup, stirring quickly to avoid the egg from coagulating.
