Bulgarian Cucumbers in Vinegar

To prepare a delicious cucumber pickle with onion, we will follow a few simple yet essential steps to achieve a savory result, perfect for accompanying summer meals or for use in various salads.

We start by washing the cucumbers well under a stream of cold water, ensuring we remove any impurities. After cleaning them, we cut off their ends to ensure there are no tough parts. Next, we take care of the onion; we peel it and slice it into thin rings, which will add a special flavor to our pickles.

Next, we take the 800 ml jars and start filling them. The first ingredient we add is the sliced onion, arranging it evenly at the bottom of the jars. Then, we place the cucumbers upright, making sure they are tightly packed to maximize the quantity we can preserve.

After arranging the vegetables, we add 1 teaspoon of salt, which will help preserve them, and 2 teaspoons of sugar to balance the acidity. We continue with 5 tablespoons of vinegar, which will give a spicy taste and help preserve the pickles. We don't forget the essential flavors, so we add a few sprigs of dill, which will provide a special flavor, and a few mustard seeds to add extra aroma.

To complete the jars, we add water up to the rim, being careful not to exceed the limit. Now, it's time to prepare for sterilization. We take a large pot, where we place a kitchen towel at the bottom to protect the jars from excessive heat and prevent them from breaking.

We place the jars in water and let them boil for 15-20 minutes over medium heat, so the ingredients combine harmoniously and the flavors infuse well. Once the boiling time is up, we carefully remove the jars and let them cool completely on a towel.

After they have cooled, the pickles can be stored in the pantry, where they will easily keep for a few months. These cucumber pickles with onion are not only delicious but also a perfect accompaniment to any meal, bringing a taste of summer even on the coldest winter days. Enjoy them with pleasure!
