Teletubbies Cake
Ingredients: For the base: 8 large eggs, 8 tablespoons of sugar, a pinch of salt, 8 tablespoons of flour, lemon zest, vanilla. For the ganache cream: 200ml liquid cream, 200g chocolate. For the whipped cream: 250ml liquid cream, 2 tablespoons of milk, 2 tablespoons of honey, 5g gelatin, sugar paste for decorations.
To prepare a delicious and refined cake, we start by carefully separating the egg whites from the yolks. This is an essential step, as the egg whites will contribute to the fluffy texture of the cake. We beat the egg whites with a pinch of salt, using a mixer on high speed, until we achieve a firm and shiny foam. Then, we gradually add 3 tablespoons of sugar from the 8 we have available. We continue mixing until the sugar is completely dissolved and the mixture becomes glossy.
In another bowl, we mix the yolks with the remaining sugar until the composition becomes creamy and a deep yellow. This step is crucial, as the sugar will melt and help create a fine texture. Once the yolks are ready, we carefully add them over the beaten egg whites, folding gently with a spatula in an up-and-down motion to avoid losing the incorporated air.
The next step is to add the flour, which will provide the structure for the cake. We mix carefully again, integrating the flour into the composition, and at this point, we can add our preferred flavors, such as vanilla or lemon zest, to enhance the taste. We prepare a baking pan, lining it with parchment paper, and pour the mixture into the pan. From this mixture, we can reserve a small amount to form a small base that will be used for the decorative house. We bake at a moderate temperature until the base turns golden and passes the toothpick test.
For the ganache cream, we put finely chopped chocolate in a container over moderate heat, adding heavy cream. It is important to stir constantly to prevent the chocolate from burning. When the chocolate is completely melted and the mixture becomes homogeneous, we let it cool to room temperature, and then we mix it to achieve a fine texture, adding rum essence.
For the whipped cream, we will soak the gelatin in cold water for a few minutes, then heat it in the microwave to make it liquid. The whipped cream will turn into a fluffy foam, to which we add honey, milk, and the cooled gelatin. This combination will provide creaminess and a sweet taste.
Once the base is cooled, we cut it into three equal slices and start filling it with the two prepared creams. To intensify the flavors, we will soak the base with a syrup made from water, sugar, lemon zest, and vanilla, which will add a note of freshness. The decoration of the cake will be done with fondant, and the butterflies painted with food coloring, made with the help of my little girl, will add a touch of joy and creativity. Thus, our cake becomes not just a delicacy but also a true work of art, perfect for celebrating beautiful moments in life.
