Homemade Chicken Noodle Soup

 Ingredients: For the noodles: 100 g of white wheat flour without emulsifiers, 1 organic egg, a pinch of salt. For the soup: 30 g of butter, coarse sea or pink salt, 1 onion, 1 carrot, 1/4 parsley, 1 tablespoon of finely chopped green celery leaves, 1/4 teaspoon oregano, 1/4 teaspoon fresh thyme, 2 liters of chicken broth (preferably homemade) plus extra for adjustment (hot), 1 tablespoon of chopped parsley, freshly ground black pepper.

To prepare a delicious homemade noodle soup, start by finely chopping a medium onion to provide a flavorful base. Then choose your favorite vegetables, such as carrots, bell peppers, or celery, and cut them into cubes or strips, depending on your preferences. In a large pot, add a piece of butter and melt it over medium heat, being careful not to burn it. Add the chopped onion and vegetables, sprinkle a little salt, and sauté them for 10-15 minutes until they become slightly soft and release their aromas.

Once the vegetables have softened, add your favorite spices, such as thyme, bay leaf, or oregano, to enhance the soup's flavor. Pour in the chicken broth, which can be homemade or store-bought, and bring everything to a gentle boil. While the vegetables are cooking, you can prepare the dough for the noodles. In a bowl, mix the flour with a teaspoon of salt and an egg, kneading gently until you obtain a smooth dough.

After the dough is well compacted, divide it into two equal parts. On a floured work surface, roll out each piece of dough as thin as possible. If you have a pasta machine, pass the dough through it, adjusting the thickness to 5-6, depending on your preferences. Each time you pass the dough through the machine, make sure to fold it and sprinkle with a little flour to prevent sticking.

If you don't have a machine, roll out the dough by hand, then cut it into thin strips to form the noodles. You can choose the desired length, and finally, sprinkle them with a little flour to prevent sticking. Once the vegetables in the soup are well cooked and the soup has been seasoned with salt, you can add the fresh noodles and let everything simmer over low heat for 3-4 minutes. Check the consistency of the soup and adjust the amount of chicken broth to achieve the desired texture. Finally, add freshly chopped parsley and a little pepper, to taste, to enhance the flavor.

Serving can be done immediately, and the warm soup with homemade noodles will surely be a treat for the whole family.
