Andalusian Gazpacho II
Ingredients: -500g tomatoes -1/2 cucumber -1/2 green pepper -1/2 onion -1 clove of garlic -salt -olive oil -vinegar -100ml water -1 slice of bread
When I decided to prepare this recipe, I started researching information on how to use tomatoes, especially whether it is recommended to use them with skin or without. I found out that they can be used both with skin and without, and I was pleased because personally, I do not like the texture of tomato skins in my dishes.
Thus, I put water to boil in a large pot, and when it started to boil, I carefully tossed in the fresh, well-washed tomatoes. I let them blanch for about a minute, which makes them lose their skin quickly, thus facilitating the peeling. After they had submerged in the boiling water, I removed them with a spatula and placed them on a plate to cool slightly. With a quick motion, I removed the skins from the tomatoes and cut them in half, placing them on a platter, waiting to deal with the other ingredients.
Next, I began to wash, peel, and chop the cucumber, bell pepper, onion, and garlic. These vegetables will add a fresh and delicious flavor to our mixture. After I finished preparing all the ingredients, I added them to the blender jar, where I blended them well until I obtained a smooth paste. The consistency is essential in this recipe, so I was careful not to leave large chunks.
Once the paste was obtained, I added a little salt and about 3 tablespoons of olive oil, which will provide a rich taste to the dish. I also tore a slice of bread into small pieces, adding it to the blender, and if the bread was too hard, I let it soak for a few minutes in water, vinegar, and oil. After adding all the ingredients, I blended again, making sure to taste the mixture. Adjusting the salt and vinegar is crucial, so I made sure to achieve a balanced flavor, but of course, you can adapt the ingredients to your preferences.
Finally, I added 100 ml of water to achieve a more fluid consistency and mixed again. The preparation was transferred to a container and I left it in the fridge, where the flavors intensified. It is served cold, and I wish you a good appetite! This recipe is perfect for a healthy snack or as an appetizer at a meal.
