Smoked Salmon Cream Soup
Ingredients: - 50 g of butter - 3 pieces of leek (white part) finely sliced - 1 kg of peeled white potatoes cut into cubes - 1500 ml of hot chicken broth (vegetable broth can also be used) - 100 ml of cooking cream - 200 g of smoked salmon (150 g for the soup and 50 g for garnish)
When I first served this soup, I was pleasantly surprised by its refined taste and rich aromas. This creamy salmon and leek soup is perfect for lunch, especially in the cold season when we crave dishes that warm us up and provide comfort. It is recommended to be served very hot, as this is the only way to fully appreciate its velvety texture and the intense flavors that harmoniously blend together.
To prepare this delicious soup, we start by taking a sufficiently large pot and placing it over medium heat. We add the butter to melt, being careful not to burn it. An effective method is to add a tablespoon of olive oil, which helps stabilize the temperature and prevent the butter from burning. Once the butter has completely melted, we add the finely chopped leek. It is sautéed for 8-10 minutes until it becomes soft and translucent, releasing its sweet and delicate aromas.
After the leek is ready, we add the peeled and cubed potatoes. We mix well to ensure that each potato piece is coated with butter, which will add a special flavor to the soup. We let the potatoes cook on low heat for another 5-7 minutes, so they soften a bit before adding the liquid.
Once the potatoes have started to soften, we add fish or vegetable broth, depending on our preferences. Then, we add the cream, which will give the soup a creamy texture and rich taste. We cover the pot and let it simmer on low heat for a maximum of 20 minutes, or until the potatoes are well cooked. Finally, we add the 150 grams of salmon cut into small pieces, to ease our work and add healthy proteins.
After the salmon has cooked for a few minutes, it’s time to blend the soup using an immersion blender or a regular blender. This results in a smooth and homogeneous soup. We serve immediately, adding pieces of cooked salmon on top for an attractive appearance and an extra burst of flavor. If we feel it’s necessary, we can add a pinch of salt; however, personally, I didn’t feel the need, as the salmon already brings a pleasant salty note. This soup is not only nourishing but also a true delight for the taste buds!
