Appetizers with Bacon and Horseradish

 Ingredients: -50 g fresh yeast -1 tablespoon sugar -100 ml warm milk -150 g bacon / smoked pork belly, diced -oil -1 kg flour, sifted -250 g butter / margarine, soft -1 egg -2 large potatoes, boiled and mashed -2 heaping tablespoons grated horseradish (from a jar) -2 tablespoons salt -160-180 g sour cream, at room temperature -1 egg yolk, for brushing -caraway seeds for sprinkling (optional)

To prepare these delicious bacon rolls, start by activating the yeast. In a small bowl, mix 25 g of fresh yeast with 2 tablespoons of granulated sugar. Gradually add 200 ml of lukewarm milk, stirring continuously until the sugar is completely dissolved. Cover the bowl with a clean towel and let it sit in a warm place for about 10-15 minutes, until the yeast starts to form air bubbles, indicating that it is active. Meanwhile, heat a pan over medium heat and add 150 g of bacon or smoked belly, cut into small cubes. Fry them in a little oil until they become crispy and golden, then remove them onto a paper towel to drain excess fat.

In a larger bowl, combine 500 g of flour, one teaspoon of salt, one egg, and after the yeast has risen, add the yeast mixture and the fried bacon. Start mixing, gradually incorporating 100 g of sour cream until you obtain a homogeneous dough. Knead the dough well for 10 minutes until it becomes elastic and pulls away easily from your hands. Forming a ball is essential, so cover the dough with a towel and let it rise in a warm place for about 30 minutes until it doubles in volume.

After the dough has risen, transfer it to a floured work surface. Roll it out to a thickness of about 1.5 cm, then fold it in half, then into quarters. Let it rise again, covered, for 25-30 minutes. After this second rise, roll out the dough again to a thick sheet of 1.5-2 cm. Using a knife, cut it into small squares, then cut out round or square shapes using a cutter. Transfer them to a baking tray lined with parchment paper, placing them close together to allow the dough to rise upwards.

Before baking, brush each roll with an egg yolk mixed with a tablespoon of milk and, if desired, sprinkle a little cumin for a flavorful taste. Preheat the oven to 180 degrees Celsius and bake the rolls for about 30 minutes, or until they are golden and browned. After baking, transfer them to a rack to cool. These rolls can be served warm, straight from the oven, or allowed to cool completely. They are delicious both plain and alongside a cup of tea or milk, making them a perfect choice for a savory breakfast or a snack between meals.
