Chicken Terrine
To prepare a delicious chicken terrine, we start by peeling the onion, making sure to wash it well to remove any impurities. Once we have cleaned it, we cut it julienne, meaning into thin strips, so that it integrates perfectly into the final composition. The next step is to take care of the parsley. Next, we focus on the chicken breast. It is boiled in water with a little salt, so that it becomes tender and retains its juiciness. After the chicken breast is boiled, we take it out of the water and let it cool a bit, then we cut it into small cubes, making sure they are of uniform size to ensure a pleasant texture for the terrine.
An essential ingredient in this recipe is gelatin. We hydrate it in 3 tablespoons of cold water, letting it absorb the liquid for a few minutes. After that, we pour it over 100 ml of the remaining broth from boiling the chicken breast. This mixture needs to be put on low heat, stirring constantly until the gelatin completely dissolves and the mixture starts to boil. Once it reaches the desired temperature, we let the mixture cool for 1-2 minutes.
In a generous bowl, we combine the diced chicken, julienne onion, chopped parsley, ground pepper, and our favorite spices, adjusting the taste as we like. Once all the ingredients are well integrated, we add the cooled gelatin and mix carefully, so as not to crush the composition, but to keep the texture airy.

We carefully pour the mixture into the molds, leveling the surface with the blade of a knife. Now, it is time to let the terrine cool, where it will sit for 2-3 hours until it hardens.
After the cooling time has passed, the terrine is ready to be sliced. The slices can be served as appetizers, accompanied by a fresh salad or a side of delicious sauces.
