Pepper Broth

 Ingredients: - 7 kg red kapia peppers and red bell peppers - salt (to taste) - a packet of preservative.

The peppers are cleaned and washed, choosing the freshest and most colorful ones we can find. It is advisable to use red, green, or yellow peppers, depending on preferences and the desired taste. After removing the seeds and stems, we cut them into smaller pieces to facilitate the chopping process. Whether we opt for a meat grinder or a food processor, we ensure a uniform texture, which will contribute to a savory and rich broth. Once chopped, the peppers are placed in a large pot, ideal for boiling them evenly.

We bring the pot to medium heat and let the peppers boil, stirring occasionally to prevent them from sticking to the bottom of the pot. It is essential to let the mixture reduce by half to concentrate the flavors and achieve a denser and tastier broth. During boiling, we add salt to taste. This not only helps to enhance the flavor but also preserves the preparation, so it's good to taste frequently to adjust the seasoning.

In the last minutes of boiling, we add the preservative we carefully selected; I opted for a sachet that will dissolve easily in the hot mixture. It is important to mix well, ensuring that the preservative is evenly incorporated into the broth. Once we have achieved the desired consistency, it is time to prepare for bottling.

Each jar must be thoroughly washed and dried to prevent contamination of the contents. We place the jars on a clean, stable surface, ready to fill them with the hot broth. We use a ladle or a wide-mouthed container to facilitate pouring. We fill each jar, leaving a little space at the top for expansion. After finishing filling all the jars, we carefully screw on the lids, ensuring they are airtight.

To complete the preservation process, we turn the jars upside down, allowing them to cool in this position. This trick helps to create a vacuum, which will preserve the broth for a longer period. We let the jars cool completely, and then we store them in a dark, cool place. This way, we can enjoy a delicious and aromatic pepper broth, perfect for use in various recipes throughout the winter. Whether you use it in soups, sauces, or dishes, the prepared product will add flavor to every meal!
