Pickles
Ingredients: cucumbers 1 pack black pepper, horseradish dill, dried thyme 240 g sugar per 10 l water 1 l of 10% vinegar 2 packs of preservative for pickles with dill optional hot peppers
To prepare a delicious cucumber preserve, start by selecting fresh cucumbers, preferably from the garden, making sure they are well washed to remove any impurities. Depending on your preferences, you can choose small cucumbers, which are crunchier, or larger ones that can be sliced. After washing the cucumbers, prepare a large container, such as a 5-liter jar or even a small barrel, where you will place the ingredients.
Start by adding some fresh dill and thyme to the bottom of the container, which will provide aroma and a special taste. Then, carefully layer the cucumbers, adding peppercorns and a few slices of horseradish for extra flavor. Finally, sprinkle 240 grams of sugar over the cucumbers. The sugar will not only add a touch of sweetness but will also help preserve them.
In a large pot, add 9 liters of water and bring it to a boil. When the water reaches boiling point, add the Szilas preservative packets. This preservative is ideal and does not require the addition of other ingredients, as it contains salt, mustard seeds, sodium benzoate, coriander, dill, black pepper, and crushed bay leaves. Let the mixture boil for 3-4 minutes for the ingredients to combine perfectly, then allow it to cool slightly.
Once the mixture has cooled, add one liter of vinegar. It is important to mix well so that the vinegar is evenly incorporated into the liquid. The amount of vinegar can be adjusted according to your personal preferences: if you like a more sour preserve, add more vinegar, and if you prefer a milder taste, reduce the amount.
Once the mixture is ready, carefully pour it over the cucumbers, ensuring that all the vegetables are well covered. Seal with an airtight lid or cap the jars, making sure there are no leaks. Then place the containers in the pantry, in a cool and dark place. The cucumber preserve will be ready to enjoy in a few weeks, when the flavors have blended perfectly, and the taste will be exquisite. This is a simple and effective recipe, perfect for enjoying cucumbers all year round!
