Appetizer Roll with Vegetables and Meat

 Ingredients: -300 g minced meat (pork, beef, mix, chicken, etc) -1 dried onion or 2 bunches of green onions, finely chopped -1 carrot, diced -1/2 red bell pepper, diced -1/2 cup peas -2-3 cloves of garlic, crushed -1/2 bunch of fresh parsley, finely chopped -1/2 bunch of fresh dill, finely chopped -1 kg potatoes -1 egg -4-6 tablespoons of flour -salt -pepper -oil

To prepare a delicious stuffed potato roll, start by boiling the potatoes with their skins on, making sure to cook them until they are soft, but not so much that they crumble. Once boiled, carefully drain them and let them cool slightly. Then, peel them and mash them with a fork, so you get a smooth puree, but not overly homogeneous. Add one egg, flour, salt, and pepper, then start kneading the dough. It is important not to knead too much to avoid developing gluten, which could make the dough elastic. If the dough is too sticky, add a little more flour until you achieve a pleasant consistency.

Meanwhile, prepare the filling. In a pan, heat a little oil and add finely chopped onion. Sauté the onion until it becomes translucent, then add diced favorite vegetables, such as carrots or peppers, and peas. After a few minutes, when the vegetables start to soften, add the minced meat. Continue to sauté the mixture, stirring constantly, until the meat changes color and is cooked through. Make sure to season to taste with salt and pepper. Finally, add finely chopped fresh herbs for an extra touch of flavor and freshness.

Once the filling is ready, prepare to assemble the roll. On a sheet of plastic wrap, spread a sheet of potato dough, about 30 x 40 cm, using only the pressure of your hands, without using a rolling pin. Make sure the sheet is even. Spread the filling evenly over the entire surface of the sheet, leaving a small margin at the edges. Using the plastic wrap as assistance, carefully roll the dough from the long side, forming a tight log. Once you have the roll, wrap it well in plastic wrap and then in aluminum foil, sealing the edges.

Place the roll in a baking dish and add hot water up to halfway up the height of the roll. Preheat the oven to a moderate temperature and place the dish inside. Let the roll bake for 30-40 minutes, being careful to turn it halfway through, adding hot water if necessary. After the time is up, carefully remove the dish from the oven, drain the water, and carefully unwrap the foils. Place the roll back in the dish, drizzle it with a little oil to achieve a nicely browned crust, and return it to the oven for another 10-15 minutes, until golden.

Let the roll cool completely before slicing. This dish manages to be a savory appetizer, perfect to be served plain or alongside various sauces, such as yogurt sauce or tomato sauce. Each slice will reveal layers of flavors, providing a memorable culinary experience.
